Steak Tips
According to Chef Mario, there are a few easy tips that everyone can use to help them cook a great steak. Firstly, use the highest- grade meat available. Fleming's uses USDA Prime, which is the highest class. Also, look for the marbling of the meat to be consistent. Before you begin cooking your steak, season it to your taste, so the meat can absorb the spices you've chosen. Be sure to serve the steak and sides on a warm plate, so they don't cool down before they hit the table. Then, sit back and enjoy the meal.

Sauteed Spinach

Ingredients (serves four):
3 tbsp Butter (lightly salted)
1 oz Red onion (julienne)
8 oz Spinach (cleaned)
As needed Black pepper (fine ground)
As needed Salt

Tools:
Cutting board
Chef’s knife
Measuring spoon
12” Teflon Sauté pan
Tongs

Preparations:
Place sauté pan on burner set on high. Add butter and onion. Cook butter to golden brown. Before the butter burns, turn off heat and add spinach, salt, and pepper. Quickly toss spinach leaves in hot brown butter. Serve.




Spinach Alfredo

Ingredients (serves four):
2 tbsp Butter (lightly salted)
1 tsp Chicken base
4 oz Cream cheese
2 tbsp Flour
1 clove Garlic (minced)
1 1/2 cup Half & Half
1 quart Heavy Cream
1 1/2 tsp Kosher Salt
1/4 cup Parmesan, fresh (grated)
1 lb Spinach, frozen (drained)
1/4 tsp White pepper

Tools:
Chef's knife
Cutting board
Measuring spoons
Sauce pot, large
Scale
Whip

Preparations:
Melt butter in a large saucepot, add fine diced onion and cook over medium heat for 3-4 minutes. Add flour and cook for 1-2 minutes, do not brown. Add cream, Half & Half, kosher salt, white pepper, minced garlic, cream cheese and chicken base. Bring to a simmer and cook for 15 minutes to melt cream cheese. Thaw spinach then squeeze all the water out by placing in the center of a towel and twisting the ends of the towel until all thaw water is removed. Add to the saucepot and blend in cooking for 10-12 minutes to a creamy consistency. Pull pot off heat and fold in Parmesan cheese until thoroughly blended. Serve.
